Low Carb Keto Broccoli Cheddar Soup
Servings: 8 people
- 1 tablespoon butter
- 1 onion chopped
- 2 cups heavy cream
- 2 cups chicken stock homemade
- 1 1/2 cup broccoli
- 1 cup carrots
- 2 1/2 cups cheddar cheese
- salt and pepper
Melt butter in a skillet over medium heat. Saute onion in hot butter until translucent.
Stir chicken stock and heavy cream into the mixture and bring to boil.
Add broccoli and carrots until vegetables are tender. Using a blender, blend mixture until thick and creamy.
Add cheddar cheese and give it a stir until cheese melts. Season with salt and pepper
