Low Carb Keto Greek Salad Omelette

- 2 tablespoons Butter
- 1 Red Onion
- 3 Tomatoes
- 1 cup parsley
- 100 gram feta cheese
- 10 eggs
Preheat oven at 350F
In a small pan, melt butter and add onion until translucent. Add parsley and tomatoes and cook for 2 minutes until tomatoes begin to soften.
In a glass baking pan, beat 10 eggs and add the vegetables. Scatter the feta cheese on top and bake it for 25 minutes or until the eggs are fully cooked.
