Ingredients
  • 2 eggs
  • 2-3 zucchini
Breadcrumbs Mixture
  • 2 cups shredded coconut
  • 1/2 cup parmesan cheese
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon italian seasonings
Instructions
  1. Preheat oven at 425 F
  2. Cut the zucchinis into strips
  3. Combine shredded coconut, parmesan cheese, paprika, garlic powder, and italian seasosings. Mix well.
  4. Dip zucchini strips into egg then into breadcrumbs mixture and transfer to a baking pan
  5. Bake for 30 minutes until golden brown and crispy.
