Low Carb Keto Broccoli Cheddar Soup
- 1 tablespoon butter
- 1 onion chopped
- 2 cups heavy cream
- 2 cups chicken stock homemade
- 1 1/2 cup broccoli
- 1 cup carrots
- 2 1/2 cups cheddar cheese
- salt and pepper
- Melt butter in a skillet over medium heat. Saute onion in hot butter until translucent.
- Stir chicken stock and heavy cream into the mixture and bring to boil.
- Add broccoli and carrots until vegetables are tender. Using a blender, blend mixture until thick and creamy.
- Add cheddar cheese and give it a stir until cheese melts. Season with salt and pepper
