  • 2 tablespoons Butter
  • 1 Red Onion
  • 3 Tomatoes
  • 1 cup parsley
  • 100 gram feta cheese
  • 10 eggs


  • Preheat oven at 350F
  • In a small pan, melt butter and add onion until translucent. Add parsley and tomatoes and cook for 2 minutes until tomatoes begin to soften.
  • In a glass baking pan, beat 10 eggs and add the vegetables. Scatter the feta cheese on top and bake it for 25 minutes or until the eggs are fully cooked.
