  • 1/4 cup coconut flour
  • 2 tablespoons unsweetened shredded coconut
  • 1/2 teaspoon baking powder
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons butter
  • 3 eggs


  • Preheat oven at 350 F.
  • Combine coconut flour, unsweetened shredded coconut, baking powder, milk, vanilla extract, butter and eggs. Mix well.
  • Grab a muffin pan and line it up with a cupcake liner (paper or silicon will work). Add the cupcake mixture and bake for 15 minutes.

    I thought it would be tasteless since there’s no sweetener in it. But it tastes good and didn’t come out dry at all!
    Didn’t have milk, too lazy to melt the butter, I used 5 tbsp of whipping cream instead.
    Too lazy to bake, I steamed it instead.
