Place the fritter ingredients in a medium bowl and stir to combine. Divide the fritters into 16 balls and then flatten it like a burger patty.
Pour the oil into a large fryan pan. Fry the fritter in the hot oil for 2 minutes per side then transfer into cooling rack.
Divide the lettuce leaves and top with the fritters and mayonaise.
