Vegetable and Quinoa Stuffed peppers

Ingredients
  

  • 1 Eggplant cubes
  • 1 Zucchini cubes
  • 2 Tomatoes cubes
  • 1 cup Quinoa
  • 2 cup Chicken Broth
  • 4 Tbsp olive oil
  • 5 Gloves garlic chopped
  • 1 Red Onion diced
  • Salt
  • Pepper
  • 1/4 cup Mint Leaves
  • 1/2 cup Parsley Leaves
  • 6 Bell Peppers halved

Instructions
 

  • Preheat oven at 450°F
  • Cook quinoa and chicken broth in a rice cooker
  • Heat 2 Tbsp of olive oil in a large skillet
  • Saute garlic and wait until brown
  • Stir in zucchini, eggplant, and red onion
  • Add salt and pepper to taste
  • Simmer for 10 minutes
  • Add tomatoes, mint leaves, parsley leaves and cooked quinoa. Mix well
  • Cut the bell peppers in half and place in the baking sheet
  • Drizzle with olive oil and season both size with salt and pepper and bake for 15 minutes
  • Stuff the bell peppers with quinoa and vegetables and bake for another 10 minutes at 350°F
